Spinach & Beet Salad w/ Goat Cheese

Sacha and I pulled this one out of a hat today.

Ingredients:

  • 2 handfuls baby spinach
  • 3 medium beets (cooked, peeled, and sliced)
  • 1/3 large red onion (sliced finely)
  • 1 medium carrot (peeled)
  • 1/2 cup crumbled goat-cheese (pepper-coated works best)
  • 1/3 cup raisins
  • 1/3 cup walnuts (chopped)
  • 1 pear (sliced)

Dressing:

  • 1/4 cup olive oil
  • 2 tbsp. apple cider vinegar
  • 1/2 tsp mustard
  • 1/2 tsp honey
  • 1/2 tsp chopped fresh rosemary
  • 1/4 tsp chopped fresh parsley
  • salt and pepper to taste

Directions:

Boil water in a small pot. Once boiled, throw in beets until somewhat tender (~ 15 min on high heat). Combine remaining ingredients (except the dressing) in a large bowl. Remove and soak beets in ice bath, peel and slice into salad with other ingredients. Add dressing, toss and enjoy.

Serves 4. Time: 45 min (max.)
