Summer Zucchini

I loved this recipe because it was super fast and easy and made a great summery tasting side.

Ingredients:

  • 1 large zucchini (slice in to rounds)
  • enough butter to coat the bottom of the pan
  • fresh mint (5 – 6 sprigs to taste)
  • 1/2 tsp of honey
  • Makes: 2-3 side dishes

In large skillet heat butter on medium to high heat.  Once foaming of butter subsides toss in the zucchini.  Cook on one side for ~2-5 mins until slightly browned.   Toss the zucchini and cook the other side similarly.   Continue this process of cooking the zucchini until both sides are golden brown.  As a final step thrown in the honey and minced mint.  Then turn of the heat and continue to toss the zucchini till it is all nicely coated with the honey and mint.  Serve warm.
